Your choice of what soda to use is up to you, as long as it is carbonated and lemon lime flavored.

It is probably obvious to you that the lemon lime soda provides a lemon lime flavor to the cake. However, the bubbles in the carbonation provide us with leavening which you probably know is essential to any cake!

As long as the soda has carbonation and is flavored with lemon lime, you should be okay with this recipe.

Here are some more helpful tips for you.

  1. This recipe calls for sugar free lemon lime soda. Feel free to use the regular version or a half and half blend if you are interested in the sugar that comes with the regular soda version to make a lower sugar cake.
  2. There are two layers of glaze. One will go on the bottom of the cake, which is the top of the cake while baking and before flipping the cake over. The second layer will go on the actual top of the cake when it is plated. After the first layer of glaze is applied, allow for the cake to cool so that it can absorb the flavors of the glaze into the center of the cake. Also, pouring the first layer of glaze over the cake will make it too wet on the inside. Let the cake cool completely before adding the second glaze topping.
  3. When you cream the butter and sugar alternative together there will be a color change due to the air being incorporated into the mixer. If you rush this process, your cake will not be light and fluffy and will be more dense. Do not rush this particular stage.

How to make the glaze topping for this recipe.

There are two glaze topping that are used in this recipe. The first layer applied to the cake is a thicker one (applied while the cake is still in the pan) while the second and thinner layer can be poured on to the cake after the cake is removed from the pan.

Here is how to make the sugar free glaze.

  • Sugar Free Powdered Sugar- 1 ½ cups.
  • Milk- 2 tablespoons (unsweetened nut milk will probably work in this recipe).
  • Sugar Free Lemon Lime Soda- 3 tablespoons.
  • Vanilla Extract- 2 teaspoons.

Here is how to make the second layer of glaze.

For the second layer of glaze, use ¼ cup of the glaze above and add additional milk to thin it out as needed. This layer of glaze can be pourable without being runny.

Ingredients needed to make Sugar Free Lemon Lime Soda Cake

  • All purpose flour- 3 cups. Flour should be sifted for best results.
  • Butter- 1 ½ cups (3 sticks). Unsalted is preferred. Butter should be at room temperature.
  • Granulated Sugar Alternative- 3 cups. Use a granulated sugar alternative that measures 1:1 with sugar and that can be baked with.
  • Eggs- 5. Eggs should be at room temperature for best results.
  • Lemon Juice- 2 tablespoons. That is about one average sized lemon, depending on the size of your lemon. Use a bottled lemon juice that has no added sugar or other ingredients.
  • Sugar Free Lemon Lime Soda- 1 cup.

How to make Sugar Free Lemon Lime Soda Cake

  • Preheat your oven to 300 degrees. Double prep a bundt cake pan. This can mean both spraying with nonstick spray and then dusting with flour.
  • Sift the flour if not already sifted. Sifting the flour will help make a finer crumb on this Bundt cake. What that means is that it will be much lighter in texture as opposed to being heavy and dense.
  • In a large mixing bowl, cream together the butter and sugar alternative until light and fluffy. This will take between five and seven minutes. Then add the eggs one at a time, mixing between additions. Follow this up by adding the lemon juice.
  • Turn off the mixer and move to using a spatula for the next step.
    Fold in one cup of flour and continue until all three cups of flour have been folded in and incorporated-do not over mix. Then stir in the soda.
  • Transfer the cake batter prepped bundt pan and bake for 1 hour and 20 minutes or until a skewer or butter knife (not a toothpick) comes out clean.
    Tip: Resist the urge to open the oven for at least an hour and do not slam the oven door shut.
  • Remove the cake from the oven and make the glaze. Use a skewer to poke holes in the cake and then pour the thinner glaze over the cake. Allow the cake to cool for a half hour. Then turn the cake over onto a cake plate and coat with the second, thicker glaze.
